Low Carb Waffles

DSC_6864Can waffles be WLS friendly?  Oh yeah! And they are seriously delicious too!

These waffles are made from Carbquik Baking Mix and are packed with protein (12g), only 4.5g net carbs and a whopping 14.5g fiber!

Did I mention they're delicious too?  Here's the recipe:




Low Carb Cinnamon Waffles

1/3 cup Carbquik Baking Mix (buy it on Amazon or Netrition)
1 whole egg
1 T. sugar free Vanilla Davinci Syrup (or whatever flavor you prefer)
2 T. unsweetened applesauce (this replaces the oil or fat usually used in waffles)
1 generous dash cinnamon

Pre-heat waffle iron (I have a Belgian Waffle Maker). Mix all the above ingredients in a bowl and let it sit for a few minutes to let the ingredients activate (it puffs up and gets fluffier if you let it sit). When the waffle iron is hot, spray with cooking spray and add the waffle mix to the iron. Close the iron and let it cook. I like mine crispy, so I let it cook until the waffles are golden brown.

Serve with a side of fresh fruit and top with Sugar Free Mrs. Butterworth maple syrup. Sprinkle the waffles with a bit of cinnamon and Splenda mixture for a bit more cinnamon flavor.
