I love cute food

I don't really like Jell-O and I definitely don't like melon... but this recipe makes me want to eat both of them! Aren't they the cutest thing you've ever seen?  It's Jell-O and melon snacks from Kraft!

I get a weekly email from Kraft with recipe using Kraft branded products - they're always super easy things but not always WLS friend or high-protein.  This one is all carbs, so you'd need to have it as a side dish at a cookout, but it's so dang cute, how could you resist?!

"Jellin' Melon" Snacks

1 cantaloupe, cut lengthwise in half
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Cherry Flavor Gelatin (use sugar free!)
1/2 cup cold water

REMOVE seeds from melon halves; cut thin slice from bottom of each. Scoop out melon flesh, leaving 1-inch-thick shells. Place upside-down on paper towels to drain.

ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 15 min. or until slightly thickened. Pour into melon shells.

REFRIGERATE 3 hours or until gelatin is firm. Cut into wedges.
